Every year my daughters hosted a Christmas party. But not just any Christmas party. It was an all-nighter extravaganza complete with our famous RKO Family Special Homemade Pancakes.
The pancake recipe came from my mom’s Fannie Farmer Cookbook. Although I don’t remember seeing the recipe, my mother dictated it to me over the phone many years ago. I called these pancakes “special” because they were always served during the Christmas party with a special ingredient.
This is a simple pancake recipe that is so much better than a mix! Give this a try and let me know what you think!
RKO Special Homemade Pancakes
Ingredients
- 2 tablespoons melted butter
- 1 egg
- 2 tablespoons of sugar
- 1 teaspoon vanilla extract (this is the “special” ingredient)
- 1/2-3/4 cup milk
- 1 cup self-rising flour
Addresses
Beat milk, butter, vanilla and egg in a bowl. Mix in the flour until just moistened. The dough will be lumpy.

For an extra special flavor to the batter, use a Mickey Mouse waffle iron or animal-shaped pans. Oh really. Animal-shaped pancakes were always a hit. The elephant shape was always a hit, but it was very difficult to keep the trunk together. Check out all my molds in the bottom of the image! When I bought the Mikey Mouse Waffle Iron, I was really set! All the girls wanted the Mickey Mouse waffle over the heart waffle or the regular pancakes. It’s fun.
Suggestion to serve
Use the good china and let them sit in front of the TV. I used Lenox Christmas China, and it was very nice to make. I decided that if the girls broke the plates, it would be fine. It was so much fun using them!

When making this recipe, I always square the ingredients. Our family had our specialty pancakes while watching the Rose Bowl Parade a few weeks ago; I even quadrupled the recipe for the 4 of us. Leftovers freeze beautifully! Just pop them in the toaster and you’ve got breakfast for the next week!
Other activities at the party included a Christmas trivia game, a Dirty Santa Christmas swap, and a Christmas craft.
