1 head of fresh coconut with the juice

200g icing sugar

Preparation

Collect the coconut juice

Remove the meat from the shell

Grate the meat into small pieces (make sure to grate along the length of the coconut meat and not through it, to get long, thin pieces of coconut instead of a mass of shredded coconut).
