Christmas Recipe Ingredients:
- cherries, 1 oz (25 g)
- almonds, flaked 40 g (1.5 oz)
- butter, unsalted 60 g (2.5 oz)
- sugar, powdered 50 g (2 oz)
- cream, double 30 ml (2 tablespoons)
- sunflower seeds, 25 g (1 oz)
- combination skin, chopped 0.75 oz (20 g)
- sultanas, 0.75 oz (20 g)
- flour, plain white 0.5 oz (15 g)
- chocolate, single dark pieces 4 oz (125 g)
Christmas Recipe Instructions:
- Take the almonds and crush them lightly. Prepare pieces of cherries cut into large pieces.
- Prepare a solution of sugar in butter and bring to a boil. Off the heat, mix together the flour, almonds, cherries, sultanas, combination skin, sunflower seeds, and cream.
- Grease a sheet of parchment paper and place heaping teaspoons of the mixture from step 2 on it, making sure there is enough room for expansion during cooking.
- Bake until the edges are golden. 180 degrees Celsius (gas mark 4, 350 F). About 7 minutes. Remove from the oven and use a large, plain metal cookie cutter to push out circles on the cookies. Bake again until golden.
- Let cool for a couple of minutes before removing to a wire rack to cool completely.
- Repeat steps 3-5 for the remaining mixture from step 2.
- Prepare the melted chocolate by heating it in a bowl over boiling water. Then take each cookie and dip it into the chocolate to coat the entire edge. Place on nonstick paper until cool.
