Spicy Maple Grilled Salmon
What do you need:
- 4 salmon fillets
- 1 green onion, thinly sliced
- 2 garlic cloves, minced
- 2 tablespoons balsamic vinegar
- 2 tablespoons reduced sodium soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon olive oil
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon ground ginger
- 1/2 teaspoon sesame oil
- 1/4 teaspoon salt
Combine onion, garlic, balsamic vinegar, soy sauce, maple syrup, olive oil, red pepper flakes, ground ginger, sesame oil, and salt in a bowl. Place the salmon fillets in a large resealable plastic bag, then marinate over the fish. Seal and refrigerate for at least 30 minutes. When done, remove the fish from the bag and discard the marinade. Cook salmon fillets skin side down on a preheated grill over high heat until cooked through, 5 to 10 minutes. To serve, drizzle some maple syrup on top if desired.
Grilled Tropical Tilapia
What do you need:
- 8 tilapia fillets
- 2 green onions, chopped
- 2 cups diced fresh pineapple
- 1/4 cup finely chopped green bell pepper
- 1/4 cup chopped fresh cilantro
- 2 tablespoons plus 4 teaspoons fresh lemon juice
- 1 tablespoon canola oil
- 1/4 teaspoon plus 1/8 teaspoon salt
- 1/8 teaspoon pepper
- pinch of cayenne pepper
Combine the onions, pineapple, green bell pepper, cilantro, 4 teaspoons lime juice, 1/8 teaspoon salt, and cayenne pepper in a bowl. Cover and refrigerate until ready to serve. In another bowl, mix 2 tablespoons each lemon juice and canola oil, then drizzle over tilapia fillets. Season with 1/4 teaspoon each of salt and pepper. Cook on preheated grill, covered, 2 to 3 minutes per side or until fish is cooked through. Top with the pineapple mixture to serve.
Grilled Halibut with Lemon and Ginger
What do you need:
- 4 halibut fillets
- 2 tablespoons of sesame oil
- 2 tablespoons of soy sauce
- 4 teaspoons fresh lemon juice
- 1 teaspoon chopped fresh ginger root
- salt and pepper to taste
- Lemon wedges, to serve
Brush the halibut fillets with lemon juice, sprinkle with chopped ginger, and season with salt and pepper. Cook on a covered, preheated grill over medium heat, skin side down, for 6 to 8 minutes or until cooked through. To serve, drizzle sesame oil and soy sauce over the fillets, then top with lemon wedges.
