Aklan Inubaran Chicken

Chicken is the most common poultry dish in Filipino cuisine. The recipes spread in various restaurants and by home chefs are evidence of this hobby. In the western part of the Visayas region is the oldest province of the country, Aklan. Alongside the rich heritage is its sumptuous cuisine. And one of Aklan’s most popular specialty dishes is Chicken Inubaran (banana marrow chicken). It is a chicken dish cooked with coconut milk and slices of banana pith, locally called ubad, which is the most central layer of the banana trunk. This tender, sweet white part is what gives the recipe such a wonderful flavor. The preparation of this dish is really laborious since you have to cut down a whole banana tree to get the pith. But today, you can buy canned hearts of palm or ubod (in Filipino) at local markets or grocery stores.

Inubaran chicken is preferably cooked with native chicken as it gives the dish its authentic flavor. Since native chicken requires more cooking time than commercially purchased chicken, you can use your best slow cooker to tenderly cook your Chicken Inubaran recipe. The slow cooker is ideal for inexpensive cuts of meat. Likewise, other ingredients are very common and within reach. Includes lemongrass, salt, vinegar, onion, garlic, black pepper, and ginger as spices to taste. You can also add libas leaves, a bitter ingredient, if you want your recipe to taste a bit bitter. Just put all the ingredients in a crock pot. Cover and simmer for about 6 to 8 hours, or until chicken is tender. Then you can now enjoy the creamy soup over hot steamed rice and savor a dining experience rich in flavor. It also goes perfectly with your favorite grilled food.

Aklan cuisine looks exotic but the taste is very nice since it uses common ingredients. It showcases an original way of cooking that brings an appetizing experience to all the local and foreign visitors on earth.
